Cacao is the raw, unroasted form of the beans (or seeds) of the Cacao tree. These beans are the primary ingredient in chocolate and many other cacao-based products. The tree itself thrives in tropical locations, and is a small evergreen tree in the Malvaceae family. The beans are found within the fruit pod of the Cacao tree. They undergo fermentation, drying, roasting, and grinding in order to turn them into the chocolates that we know and love. Once the cacao beans are processed, the roasted and ground form is then known as cocoa.
